Clementine Cake (inspired by Claudia Roden)

You are often disappointed when you meet someone whose work you admire.Ìý We had the opposite reaction when we met Claudia Roden; we were trembling with excitement when she came to the restaurantÌýand she turned out to be the gentlest, warmest, most charming person you are ever likely to meet.Ìý Her flourless orange cake is legendary; we had it on our dessert menu, proud to have her name gracing it.Ìý If you haven’t tried her cake before, then you really must.Ìý And if you already knowÌýand love it, as we do, you can try this take on it.

Makes a 23cm (9 inch) round cake

Prep time: 25 mins

Ingredients

2 whole ripe clementines

3 eggs

130g caster sugar

150g ground almonds

½ tsp baking powder

½ tsp ground ginger

1 tbsp cornflour

a pinch of table salt

Method

  • Cut a cross into the top of each clementine where the stem is, so that you reveal the flesh slightly, but keep the fruit intact.Ìý Place in a saucepanÌýand cover with plenty of water.Ìý Bring to the boil, then drainÌýand discard the water.Ìý Repeat the process twice more until you have boiled and drained the fruit 3 times.
  • Place the boiled clementines in a colander and allow to cool a little.Ìý Split the fruitÌýand remove any seedsÌýand the central white pith.Ìý You should end up with about 200-220g.
  • Preheat the oven to 190C/ 170C fan/ gas mark 5 and line the base of the cake tin with baking parchment.
  • Place the clementines in a food processor with a metal blade,Ìýand purée until the texture resembles baby food.Ìý Keep the processor running and add the eggs and sugar to incorporate.Ìý Mix the remaining ingredients in a large bowl, then pour the clementine mixture on top.Ìý Fold together until well combined.Ìý Transfer the batter to the tin and smooth the top.
  • Bake in the centre of the oven for 30 mins, then turn the tin around for an even bake and leave for another 5-10 mins.Ìý The end result should be springy to the touch.Ìý Allow to cool in the tin before turning out and serving.Ìý This cake keeps well for a few days and is best kept in the fridge.
