The Nation's Favourite Curry: Jalfrezi, by Chetna Makan.

Chetna Makan's Chicken JalfreziΜύ

For the chicken:

600 gms boneless skinless chicken cut into long strips

Β½ tsp salt

1 tsp coriander powder

ΒΌ tsp turmeric powder

For the sauce:

1 tbsp sunflower oil

1 onion, grated

2 tomatoes, grated

Β½ tsp salt

Β½ chilli powder

2 green chillies

1 tsp garam masala

ΒΌ tsp turmeric powder

2 tbsp sunflower oil

2 onions, thinly sliced

1 green pepper, thinly sliced

2 green chillies, finely chopped

2 inch ginger, cut into juliennes

Β½ tsp salt

Β½ tsp chilli powder

Β½ tsp garam masala

2 tbsp vinegar

4 tbsp ketchup

handful of fresh coriander, roughly chopped

Μύ

Start by marinating the chicken in salt, coriander and turmeric powder. Rub it well into the chicken and leave it to marinade for 1 hour or more.

Meanwhile prepare the sauce. In a pan heat the oil and add the onions. Once they turn golden brown add the tomatoes and mix well. Add Β½ cup of water and cook on medium heat for 5-10 minutes. To this add the salt, green chillies, chilli powder, garam masala, turmeric and mix well. Leave it aside.

In another pan heat 1 tbsp oil and cook the chicken strips for 5-7 minutes until the chicken is cooked. Remove it on a plate.

In the same pan add another 1 tbsp oil and add the onions and pepper and stir fry for 2 minutes. Add the ginger, green chillies and cook for another minute. To this add the salt, chilli powder, garam masala, vinegar and ketchup. Mix it all well and add the cooked chicken to it. Now add the sauce made earlier to this chicken mix.

Μύ

Give it a good mix and sprinkle fresh coriander on top. Serve this warm with any flat breads or some rice.
