Summer Skirt with Chimichurri & Corn-Utopia Salsa

There is nothing cheap, in the pejorative sense of the word, about a piece of summer skirt.听 It is what the French call 鈥榦nglet鈥 or flank steak, so whilst not as tender or highly prized as rump, sirloin or fillet, it is perfect for the griddle or barbecue, & staggeringly cheap.听 I simply slice it thinly across the grain once it has rested.听 Smoky with picante piment贸n, daughter no.1 Miranda鈥檚 chimichurri echoes the scent of barbecue smoke.听 A dish to eat hot, warm or at room or garden temperature.

Serves 4
听
Prep time:听 25 mins + 30 mins standing
Cooking time: 10 mins for the meat & 15 mins for the corn cobs
听
Ingredients
1 thick piece of skirt about 600g
sea salt & black pepper
a little olive oil
听
For the chimichurri
Small bunch of flat-leaf parsley, chopped
1 medium red onion, peeled & finely chopped
4 garlic cloves, peeled & crushed
陆 red pepper, deseeded & diced, or 4 roasted piquillo peppers from a jar, drained & diced
1 tomato, peeled, deseeded & finely chopped
1 tbsp chopped oregano leaves
1 tsp smoked paprika (or ordinary paprika)
1 tsp shredded bay leaf (in very small flakes)
1 tsp coarse sea salt
1 tsp ground black pepper
a knife tip of dried chilli flakes, to taste
50ml water
100ml olive oil
50ml red wine vinegar
听
听
Corn-utopia salsa
2 corn-on-the-cobs (Nigel says you can use tinned sweetcorn)
3-4 large tomatoes
1 small red onion, peeled & finely diced
small bunch of coriander, chopped
grated zest & juice of 1 lime
1 tbsp olive oil
听
Method
1.听听
First make the chimichurri.听
2.听听
Mix all the ingredients, except the olive oil & wine vinegar,
together in a large bowl, tossing well.听 Leave to stand for 30 mins to
allow the flavours to marry.

Meanwhile, for the salsa, cook the corn cobs in boiling salted
water until tender, about 15 mins.听
4.听听
Slice the corn kernels off the cobs & tip them into a
bowl.听听
5.听听
Immerse the tomatoes in a bowl of boiling hot water for 30
seconds, then drain, refresh under cold water & peel.听听
6.听听
Halve, deseed & dice the tomatoes.听 Add to the corn with
the rest of the ingredients.听Season with salt & pepper to taste &
stir gently to combine.
7.听听
Heat up your barbecue or brush a griddle or heavy cast-iron pan
with a little olive oil & heat until starting to smoke.听 Season one side
of the skirt & place it, seasoned side down, on the griddle.听
8.听听
Cook for about 4 mins, then season the surface, flip the steak
over & cook for another 4 mins.听 The meat should now be
medium-rare.听
9.听听
To check, press with your fingers before removing from the
griddle; it should be springy to the touch.听
10.听听听听听听听听听听听听听听 Transfer to a carving board, cover loosely with foil & leave to rest for 5 mins.

Meanwhile, stir the oil & wine vinegar into the
chimichurri.听 Using a well-sharpened carving knife, slice the beef very
thinly, horizontally across the grain & lay on a warmed large
platter.听 (If, as you carve, the meat looks a bit raw towards the middle,
simply put it back on the griddle for a minute).

Drizzle some of the chimichurri across the meat.听听
13.听听听听听听听听听听听听听听 Put the rest into a small serving bowl for guests to help themselves.听 Accompany with the corn-utopia salsa.
