Foodie Thursday: Cypriot Roast Chicken with Cumin Potatoes

Resident cook Nigel Barden brings Simon and the team roast chicken with cumin potatoes, and Jo Whiley visits the Mac in Belfast, one of the Museum of the Year finalists.

Cypriot Roast Chicken & Cumin Potatoes

Prep time: 15 mins

Cooking time: 1hr 30mins

Ìý

For the chicken

Ingredients

1 1.4kg (3lb) oven ready chicken

1 large buffalo tomato, sliced into 8 pieces

1 large onion, sliced

2 tbsp of extra-virgin olive oil

1½ heaped tsp of dried oregano

1½ heaped tsp of ground cinnamon

Sea salt & fresh ground pepper

Method

1.ÌýHeat oven to 180C/ fan 160C /gas 4.

2.ÌýPlace chicken in roasting dish & rub with 1 tbsp of olive oil.

3.ÌýPlace tomato slices on breast & legs. ÌýSpread the onion rings & place all around chicken.

4.ÌýSeason with salt, pepper, oregano & cinnamon.

5.ÌýDrizzle remaining olive oil over chicken & place in oven for 1½ hrs or till juices run clear.

For the Cumin Potatoes

Cyprus potatoes are grown in distinctive clay soil, which makes them very nutritious & exceptionally tasty; there is no better potato in the world. ÌýYou can find them in Greek, Mediterranean, Asian or Middle Eastern delis & larger supermarkets are now stocking them too.

Ìý

The potatoes can be cooked in the same oven as the chicken, for the final hour, so put them in after 30mins & check to ensure they’re cooked through.

Cooking time: 1hr 10 mins

Ingredients

6 medium Cypriot potatoes (halved lengthways), or any other waxy potato such as Yukon Gold.

1 large onion, sliced into rings

2 tsp ground cumin

2 tsp ground cinnamon

2 tbsp extra-virgin olive oil

400g can plum tomatoes

Sea salt & freshly ground black pepper

Method

1.ÌýPlace the potatoes & onions in a large shallow roasting dish.

2.ÌýSprinkle on the cumin, cinnamon, salt & pepper, to taste & then drizzle with the oil. ÌýToss together well.

3.ÌýUse your hands to crush the tomatoes over the potatoes. ÌýPour 200ml water into the base of the tin.

4.ÌýCover with foil & cook for 40 mins on 200C/ fan 180C /gas 6, then remove the foil & reduce the oven temperature to 180C/ fan 160C /gas 4 for another 20-30 mins or until the potatoes are tender.


Nigel’s Top Tip:

•ÌýIf you want to track down Cyprus potatoes, many larger supermarkets are now stocking them, otherwise head for a Greek, Mediterranean, or Middle Eastern deli. Otherwise there are plenty of good British stunt-doubles
