American Breakfast Biscuits with Sausage Gravy, accompanied by Baked Eggs and Ham
Baked Eggs and Ham
4 eggs
4 tablespoons chopped boiled ham
50g grated cheddar
4 tablespoons cream
Freshly ground black pepper

Butter 4 ramekins and set oven to 180oc.
Crack an egg into each ramekin and sprinkle over the ham.
Sprinkle the cheese onto the ham and drizzle over the cream evenly.
Season with pepper.
Place in oven until the eggs have set but are just cooked – about 8 minutes.
Serve.

Sausage Gravy
500g pork sausage
1 tablespoon cooking oil
1 small onion, finely chopped
2 tablespoons plain flour
350ml hot chicken stock, made with one cube
1 tablespoon crème fraiche

Heat the oil in a frying pan until hot.
Chop the sausage into bite size pieces and add to the hot oil.
Seal on both sides for 3 minutes each side.
Add the flour and mix well.
Add the stock and stir to a smooth sauce.
Simmer gently for 10 minutes.
Add the crème fraiche and remove from heat.

250g self-raising flour
Pinch of salt
50g butter
175ml buttermilk
1 egg yolk

Set oven to 200oc.
Mix the flour and salt in a bowl and rub in the flour until the mixture resembles fine crumbs. Make a well in the middle and mix in the buttermilk to a dough. Place on a floured surface and flatten out.
Cut into rounds – you'll get 6, place on a lightly floured baking tray and brush the tops with the egg yolk.
Bake for 15 minutes.
Serve immediately, split with the sausage mixture in the middle.
