Simon Mayo is joined by award-winning singer-songwriter Ed Sheeran ahead of his Radio 2 In Concert performance at the Βι¶ΉΤΌΕΔ Radio Theatre.

He's won BRIT Awards, Grammys, MTV Awards and he's the first ever winner of British Artist of the Year at the Βι¶ΉΤΌΕΔ Music Awards. Now he's performing a special gig for Radio 2 listeners at the Βι¶ΉΤΌΕΔ Radio Theatre. Yes, it's man of the moment Ed Sheeran. He pops in to chat to Simon ahead of his intimate performance.

Spanish Chicken with Chorizo and Potatoes

Spanish Chicken with Chorizo & Potatoes by Nigella Lawson from Nigella's Kitchen -RecipesΒ from the Heart of the Βι¶ΉΤΌΕΔΒ 

Serves 6

Ingredients

2 tbsp olive oil

12 chicken thighs with skin & bone still on

750g chorizo (whole if baby ones or cut into 4cm/1 & a half inch chunks if regular sized)

1 kg new potatoes (halved)

2 red onions (peeled & roughly chopped)

2 tsp dried oregano

grated zest of 1 orange

Method

Preheat the oven to 220 C/gas mark 7/425 F

Put the oil in the bottom of 2 shallow roasting tins, 1 tbsp in each

Rub the skin of the chicken in the oil, then turn skin-side up, 6 pieces in each tin

Divide the chorizo sausages & the new potatoes between the 2 tins

Sprinkle the onion & the oregano over, then grate the orange zest over the contents of the 2 tins

Cook for 1 hour, but after 30 minutes, swap the top tray with the bottom tray in the oven & baste the contents with the orange-coloured juicesΒ 

Nigel's Top Tips

Don't worry if you haven't got new potatoes to hand, use waxy spuds cut into quarters

Kale roasted in the oven until crispy, is a great side dish at this time of year & you can slosh over a little olive oil & balsamic vinegar, or soy sauce rather than salt when cooking
