Stephen Chisholm's Leek and Gruyere Wholemeal Soda
Ingredients
450g plain wholemeal flour
175g plain white flour
1 tsp bicarbonate of soda, heaped
1 tsp salt
450ml buttermilk
1 large leek
150g gruyere cheese, grated

ÌýMethod
Ìý· Preheat oven to 200°C/180ËšC Fan/Gas 6.
· Put 1 tbsp olive oil into a frying pan over a medium-high heat. Cut the leek into 1cm slices, add to the pan and fry for a few minutes until softened, but not coloured. Meanwhile grate the gruyere.
·ÌýMix the flours, salt and soda in a large bowl. Add in the leeks and gruyere and mix thoroughly.
·ÌýAdd enough buttermilk to make a soft dough.
·ÌýWith floured hands place the dough onto a floured worktop and knead a few times only into a ball. Make a large cross in the top of the dough and place bake for 40-45 minutes. Check if fully cooked by tapping the bottom and listen for a hollow sound.
·ÌýCool on wire rack.
