Jak's Sherry Trifle (aka Fred and Ginger)
Jelly base
250ml Ginger wine
3 sheets gelatine (softened in cold water)
100ml orange juice
100gr sponge pieces/fingers soak in some ginger wine
Custard
500ml Double cream
100gr caster sugar
Β½ tsp vanilla seed
4 egg yolks
1tbsp cornflour
Syllabub Topping
250ml Double cream
4 tbspΜύ icing sugar
100ml of your favourite sherry

1. Soak sponge and place into bowl
2. Warm ginger wine & juice then add gelatine & add stir until dissolved pour into the bowl & set
3. Custard heat cream & whisk yolks sugar & cornflour add to hot cream & stir until thick
4. Pour over set jelly then whip cream very lightly with the sugar & sherry until very soft peak
5. Spoon on top of the custard
