Clapshot Pie by Tristan Hogg & Jon Simon from ‘Pieminister - A Pie for all Seasons’ (Bantam Press)

Ingredients
2 tbsp vegetable oil
1 large onion, finely diced
2 large carrots, peeled & finely diced
2 celery sticks, finely diced
800g minced lamb
3 tbsp plain flour
800ml lamb or chicken stock
soy sauce to taste
125g Cheddar cheese, grated
50g crispy shallots
freshly ground black pepper

For the clapshot
800g swede, peeled & diced
800g potatoes, peeled & diced
125g butter
125g/ml milk
sea salt & black pepper

Method
Heat the oil in a large pan, add the vegetables & cook until lightly coloured.
Add the mince & fry over a medium heat, stirring frequently, for 5-10 mins, until it is cooked through.
Stir in the flour, then gradually stir in the stock.
Season with soy sauce & black pepper, bring to a simmer & cook for 5-10 mins, until slightly thickened.
Strain through a sieve, reserving the liquid, then put the mince mixture into an ovenproof dish & set aside.

Preheat the oven to 180C/350F/gas mark 4. Ìý
For the clapshot, cook the swede & potatoes in separate pans of boiling salted water until tender, then drain thoroughly.

Tip them both into the same pan, mash with the butter & milk & season to taste, these vegetables are good with plenty of black pepper.
Ìý
Spread the mash over the mince. ÌýSprinkle with the grated cheese & place in the oven for 35-40 mins, until the cheese is golden & bubbling.
Sprinkle with the crispy shallots. (Get hold of them in Chinese stores; they can also be found lurking near the baked beans in some supermarkets).
Reheat the reserved cooking liquid from the mince, then taste & adjust the seasoning if necessary. ÌýServe with the clapshot.

Nigel's Top Tip
- Adding the flour to this dish absorbs the extra liquid, particularly the stock, giving it another layer of flavour.
