It is week six, and Lord Sugar sends the candidates to Scotland, where they must make gourmet grub and sell it on the streets of Edinburgh. The teams decide on Italian meatballs and Scottish stew, but before heading north there is a spot of market research at one of London's fancy street food fairs. It is clear from what is served up that there is more to this business than dishing up a burger and chips.
In Edinburgh, two top-notch chefs help cook up the teams' recipes, but when it comes to mass producing the portions the stew is beefed up with pricey produce and the meatballs are made on the cheap.
The teams have one day to sell from mobile units; one team tempts tourists with the sound of bagpipes and they cash in on the lunch-time rush. The others pitch up outside a football match, but soon find that fans will not fork out for what's on offer. In the afternoon the pressure is on to shift what is left, prices are slashed and hopes for big profits fade.
Back in the boardroom Lord Sugar chews over the results, and it is not long before one candidate gets their just desserts when they hear the words 'you're fired'.
