Food writer and chef Anjum Anand is on a mission to show how simple it is to cook healthy Indian cuisine. In this episode she attempts to put some light dishes on the menu at a luxury hotel and spa. Anjum demonstrates how to make stuffed dhosas, a type of pancake; avial, a mixed vegetable dish accompanied by a slightly sweet Bengal gram lentil curry; shrikand, a yoghurt-based dessert made with saffron. An Ayurvedic expert reveals how the ingredients of Indian food have medicinal properties.
