When making a wedding cake, make sure you read through all the instructions carefully, right through to the end, so you get a clear picture of the work involved and the time needed.

When you’re starting out it’s best to go with cakes that only have a few tiers, say two or three, as these are more stable and easier to assemble. Cakes with many tiers, say four layers or more, are extremely fragile, complex to assemble and must be perfectly balanced and supported or they’ll topple and fall. Only when you’re very experienced should you attempt these extravagant multi-tiered cakes. Aim at first for smaller tiered cakes that have their own delicate beauty and simplicity.
