Stir-fried beansprouts with peppers and herbs

Ingredients
- 1 tbsp olive oil
- Β½ onion, sliced
- ΒΌ red pepper, chopped
- 1 garlic clove, finely chopped
- 150²΅/5Β½΄Η³ϊ beansprouts
- 1 tbsp chopped fresh dill
- 1 tbsp chopped fresh parsley
- salt and freshly ground black pepper
Method
Heat the olive oil in a wok or large frying pan, add the onion and red pepper and stir fry for 3-4 minutes until softened.
Add the garlic and cook for one minute, then add the beansprouts and cook for a further minute.
Add the herbs, season well with salt and freshly ground black pepper and stir.
To serve, place into a serving dish.
