Simple veggie fajitas
Veggie fajitas are a simple supper for any night of the week and this easy budget recipe will go down well with all the family. If you have any leftover vegetables this is a great way to use them up. Buying a ready-mixed spice blend can be an economical spend if you spread it over a few meals, but check the recipe tip before shopping as you might already have most of the ingredients to make your own.
This recipe is part of a Budget vegetarian meal plan for four. In March 2023 this recipe was costed at an average of £4.64 when checking prices at four UK supermarkets. This recipe is designed to be made in conjunction with a low-cost store-cupboard.
Ingredients
- 3 tbsp vegetable oil
- 1 medium onion, cut into thin wedges
- 2 peppers, any colour, deseeded and thinly sliced
- 2–3 medium courgettes (about 440g/15½oz), trimmed and cut into roughly 6cm/2½in sticks
- 2 tbsp fajita seasoning mix from a packet (see recipe tip)
- 8 soft tortilla wraps
- 150ml/¼ pint soured cream or crème fraîche
- ground black pepper
Method
Put two tablespoons of the oil and all the vegetables in a large bowl, season with a little ground black pepper and toss together well.
Place a large non-stick frying pan or wok over a high heat and stir fry half the vegetables for 3–4 minutes, or until lightly browned and just cooked. Tip into a bowl. Cook the rest of the vegetables in the same way.
Once the second batch of vegetables is ready, add the remaining oil, the first batch of vegetables and the fajita seasoning to the pan and toss together over a medium-high heat for 1–2 minutes, or until hot.
Warm the tortillas according to the pack instructions – a microwave works well for this. Serve the spicy vegetables straight from the pan, piled into the warm tortillas and topped with soured cream.
Recipe Tips
Use the 150ml/¼ pint soured cream that's leftover from the Bean burgers in this Budget vegetarian meal plan for four to serve inside these fajitas. For extra protein, add some grated cheese or a can of beans to the vegetables.
The remaining seasoning mix will keep well, either in the packet, folded down and sealed or in a small jar, ready for next time.
If you have a good spice cupboard you can make your own blend instead of buying the fajita mix. Combine 2 tsp ground cumin, 2 tsp ground coriander, 1 tsp dried coriander leaf, 1 tsp smoked paprika, ½ tsp caster sugar, a pinch of salt and some ground black pepper. Use as above.
For extra special fajitas, add guacamole, salsa, grated cheddar and some fresh coriander.
