Roasted almonds

Ingredients
- 350g/12oz organic whole almonds with the skin on
- 3 tbsp light olive oil
- 1 tsp cayenne
- 1 tsp paprika
- 1 tbsp Maldon sea salt
- 1 tsp freshly ground black pepper
Method
Preheat the oven to 180C/350F/Gas 4.
Toss all the ingredients together in a large bowl. Tip on to a roasting tray or use a large terracotta dish. Cook in the oven for 20-25 minutes tossing frequently. Drain well on kitchen paper before serving. They may need a little more salt so have a taste before serving.
