Fresh tomato sauce
This summery, fresh tomato sauce is bursting with the sweetness of cherry tomatoes. It comes together in less than 20 minutes and is perfect with pasta or fish for a weeknight supper.
Ingredients
- 4 tbsp extra virgin olive oil
- 4 garlic cloves, smashed
- 800g/1lb 12oz ripe cherry tomatoes
- handful fresh basil leaves
- Β½ tsp sugar (optional)
- salt and freshly ground black pepper
Method
Heat the olive oil in a large frying pan over a low heat.
Add the garlic and cook, stirring occasionally, for about 2 minutes, until softened and fragrant but not browned.
Add the cherry tomatoes, season generously with salt and pepper and stir to coat in the garlicky oil. Cook, stirring occasionally, for 5 minutes, until the tomatoes begin to burst.
Using the back of a wooden spoon, crush half of the tomatoes, then continue to cook, stirring occasionally, for about 10 minutes, until the mixture forms a chunky sauce.
Tear in the fresh basil, add the sugar (if using) and stir to combine, then remove the pan from the heat.
Taste and adjust the seasoning before serving.
