Bacon, mozzarella, and mushroom pizza

Ingredients

  • plain flour: 150²µ/5½´Ç³ú plain flour
  • 50ml/2fl oz water
  • olive oil: 2 tbsp olive oil
  • salt: pinch salt

For the tomato sauce

  • plum: 1 tin plum tomatoes
  • olive oil: 3 tbsp olive oil
  • garlic: 1 garlic clove, finely chopped
  • parsley: 25g/1oz parsley chopped
  • basil: 25g/1oz basil chopped
  • black pepper: salt and freshly ground black pepper

For the topping

  • lardons: 50g/1¾oz crispy fried bacon lardons
  • mozzarella: 50g/1¾oz smoked mozzarella ripped
  • mushrooms: 50g/1¾oz marinated mushrooms

Method

  1. Preheat the oven to 200C/400F/Gas 6.

  2. To make the base, in a large bowl mix the flour, water, oil and salt to form a dough.

  3. Dust your hands with flour and shape the dough into a ball. Roll out on a floured surface into an 20cm/8in round.

  4. Heat a small frying pan and cook for two minutes on each side.

  5. To make the tomato sauce, place the tomatoes, olive oil and garlic in a saucepan.

  6. Simmer until thick, then stir in the herbs. Season with salt and freshly ground black pepper.

  7. Spread some of the tomato sauce on the pizza. Sprinkle over the bacon, mushrooms and cheese, and season with salt and freshly ground black pepper.

  8. Bake in the oven for five minutes until the cheese has melted.
