This air fryer sausage bake is a super speedy all-in-one meal, perfect for weeknights when you're low on time and energy.

Ingredients
- red onion: 1 red onion, quartered, or 1 leek, cut into pieces
- pepper: 1 red pepper, seeds removed and cut into chunks
- cherry tomatoes: 180²µ/6¼´Ç³ú cherry tomatoes
- courgette: 1 courgette, cut into 2cm/¾in chunks
- olive oil: olive oil spray
- chicken stock: 150ml/5fl oz chicken stock
- tomato purée: 2 tbsp tomato purée
- potatoes: 4 medium potatoes (about 400g/14oz in total), scrubbed and sliced into 1cm/½in thick wedges
- pork sausages: 8 pork sausages
- basil: handful basil leaves, to garnish (optional)
Method
Heat the air fryer to 190C. Place the onion, pepper, cherry tomatoes and courgette in a container that will fit in the air fryer (see Recipe Tip) and spray with olive oil.
Roast for 10 minutes, then mix together the stock and tomato purée in a jug and pour this over the vegetables. Return to the air fryer for 5 minutes then set aside.
Toss the potato wedges in a few sprays of olive oil. Place in a lined basket of the air fryer and cook for 12 minutes. Remove and shake the pan or turn the potatoes, then top with the sausages. Cook for 10 minutes or until done, turning after 6 minutes. (If the air fryer basket is smaller, do this in two batches.)
Combine the vegetables and the sausage mixture and return to the air fryer for 2 minutes to heat through. Spoon the sausage bake into a serving dish and top with the basil leaves, if using. Serve immediately.
Recipe tips
If it fits, use a 20cm/8in round cake tin to bake everything in – it works a treat when adding the liquids too. Just make sure it's not a loose-bottomed tin!
Feel free to swap in vegetarian sausages for a veggie version.
