I believe that there are some local censuses and some religious census' but there are no Ireland wide census pre 1901
If you know they were householders and where they lived, county, townland etc. Then Griffith Valuations are quite useful, produced around 1856.
Get the Overseas Records Info sheet 9 on Ireland from the PRO. However, most records went either in the 1916 rebellion or in 1922.
All census records prior to 1901 were destroyed in Dublin's Four Courts in 1922. Only fragments survive. Most people start by consulting the 1911 and 1901 census data and work back.
Griffith's Valuation gives a lot of info about land tenants in the 1850s.
Prior to that you can look up the Tithe Applotment Books from the 1820s and 1830s.
Of course, you can also go to parish records, most of which are now on microfilm in the National Library.
Information about all of these sources (and sometimes even access) is possible using the net. There are also local genealogical centres around the country that will do searches for you for a fee.

May I suggest the 'irishorigins' website. It's a pay per view one but provides some very good information.
Additionally, if you know the county from which your ancestors originated, then often there is a local archives centre which can help. They often have researches who have already carried out a search on a particular name. For a fee, that information can be made available to you
