We are looking for any details to confirm that my grandmother was adopted as such. If we have the right person it seems that her natural father died and her mother then remarried in 1901. As she was only 3 years old at the time would she have just taken the surname of the new husband or would there have been some sort of formal adoption procedure that would be documented?

I might be worth looking at your grandmother's marriage certificate which would give her 'maiden' namen which in turn may answer your question.

Modern day legal adoption as we understand it only dates from c.1926 in England and Wales and from 1930 in Scotland. Before these dates adoption was I understand more informal. Whether the surname will change or not will depend on the circumstances of the case. Some children would have had their surnames changed. Other children would not. The simple answer is to search using all known surames.

Already tried this avenue.
The name on the marriage certificate is that of the new husband. My theory is that as she probably had no other details or recollections (due to her age) she had no idea that he was not her natural father and so would not have known any different.

You have confirmed my thoughts.
As there was no official paperwork required she probably just took on the name of the man she assumed or was told was her natural father. Whether she actually ever knew the truth is another question, which as she passed away in 1960 will have to remain unanswered.
